So, while the kids are having their plain mac & cheese you can dress yours up and create something more supper worthy! Veggie Macaroni and Cheese #15MinuteSuppers

Serves: 4
 
Ingredients
  • 8 oz Pasta (San Giorgio 3 minute boilng bags rock)
  • 1 TBSP Butter
  • 1 TBSP Flour
  • ¾ Milk
  • 8 oz Shredded Cheddar Cheese
  • 4 oz Cream Cheese cubed
  • 16 oz bag Mixed Veggies Thawed and chopped to bite size pieces(I used broccoli and cauliflower)
  • ¼ tsp Pepper
  • 1 egg beaten
  • 1 cup Bread Crumbs
Instructions
  1. Boil pasta to al dente
  2. While pasta is cooking melt butter in large pan.
  3. Add flour and stir until smooth.
  4. Pour in milk and stir until blended.
  5. Add shredded cheese and stir until melted.
  6. Continue to stir and add cream cheese and beaten egg, stirring until smooth. Sprinkle in pepper and add veggies.
  7. When veggies are well coated with cheese, turn off burner and add macaroni and ¾ cup bread crumbs and stir well.
  8. You can stop here and serve OR
  9. put macaroni mixture in greased pan and top with ¼ bread crumbs and bake at 450 degrees for 3-5 minutes. Crumbs will be slightly crunchy!
  10. Great served with stewed tomatoes.

    I love 15 minute recipes!! I have a ton of cookbooks that include the words “fast”, “quick”, etc! I am busy single mom with 3 boys, 2 of whom are in sports so I am always looking for quick yet substantial meals for us especially during the week! this looks delicious! :)

    This is definitely a recipe to try, I am not a big fan of plain macaroni and cheese, so I love suggestions of things to add to it. Also there are 3 minute boiling bags? I have got to try those.

    This 15-minute supper movement is fantastic for working parents who need all the help they can get getting dinner on the table. The veggie mac and cheese is a good option to try and sneak in some vegetables but I would have to have some more protein with mine.

  20. I’m lactose intolerant so mac and cheese has never been a staple of mine, but this does look delicious! Perhaps i will make it for the family one evening and I’ll just eat chocolate for dinner. haha #goodplan :)
