Can I prep this easy coleslaw recipe in advance? 

You may need to do some planning in preparation for this coleslaw recipe because it really should chill for at least one hour before serving. You can also prepare it up to a day ahead of time and it will still taste and look great!

How to make coleslaw from scratch

Once upon a time, I would have dug out the food processor and shredded the cabbage and carrots. Nowadays I usually stick to the prepackaged coleslaw mix. It’s a bit more colorful with the purple cabbage, green cabbage, and carrots all mixed together. Plus, there’s less clean-up time.

For the base you will need:
shredded carrots (you can buy them already shredded in the produce section)
Coleslaw mix. There is approx. 7 to 8 cups shredded vegetables in a 16 oz. pre-packaged coleslaw mix.

You can definitely shred your own vegetables for this coleslaw if you want! If you have the time and the ingredients there’s no reason not to shred the veggies up yourself and make a true made from scratch recipe for homemade coleslaw.  

I’ll have to confess that I am a mess in the kitchen, and buying the bagged mix saves me so much time. Cleaning up my food processor takes up a lot of my time, so I prefer not to use it for shredding cabbage for this coleslaw recipe.

How do I make this homemade coleslaw dressing? 

Start with

light mayonnaise
plain no-fat greek yogurt
low-fat buttermilk or regular low-fat milk is fine too.
white vinegar
Stevia

If you are not a fan of mayo, you will want to try this no mayo coleslaw recipe.

First, you will need to whisk all of the sauce or dressing ingredients together in a large bowl. This OXO balloon whisk just feels right in my hand. It’s used to whip up everything from sauces to eggs to pancakes.

Whisks and rubber spatulas are two kitchen tools I couldn’t live without.  After the dressing ingredients are well blended, you will add your prepackaged coleslaw mix.

When should I make this homemade coleslaw? 

You should try to make your coleslaw recipe at least an hour in advance because it does need to sit in the refrigerator for a bit so everything can come together and the sauce will taste much better after a good chill! 

Homemade coleslaw is perfect for picnics and family gatherings. Pick your favorite bowl, cover it up and place in an insulated carrier for easy transport and cold storage.

  • 5 TBSP light mayonnaise
  • 1/3 cup plain no-fat greek yogurt
  • 1/3 cup low-fat buttermilk, regular milk is fine too.
  • 1 Tbsp white vinegar
  • 1 packet Stevia (or more to taste)
  • 1 cup shredded carrots
  • 7 cups shredded cabbage and carrots, There is approx. 7 cups shredded coleslaw mix in a 16 oz bag of prepackaged coleslaw mix

Instructions

  1. Whisk together sauce or dressing ingredients until well blended
  2. Stir in cabbage mixture until all is coated.
  3. Chill for at least one hour before serving.

  1. According to my Weight Watchers, Smart Point calculater, 1 cup of this slaw is 13 smart points!!!!
    So, I Don’t know how you can honestly say, that it is 1 Freestyle Smart point??
    The Calories, Fat, and Sugar alone; in 1/2 cup, should tell anyone, It’s more than 1…

    1. I agree that the nutritional info. indicates that this salad would be 13 points on the Blue Plan for 1 cup of coleslaw. This does not make sense with the statement that it’s 1 point for 1/2 cup. What gives?

    1. Thank you! I feel like coleslaw is something people eat just a bit of at potlucks. I don’t think you will need much more than this. You won’t have to worry about bringing anything back home again.
